Cheesy Buffalo Cauliflower Rice with Chicken

2 cups Cauliflower rice, raw (already riced) – 40 calories

2 Tbsp whipped Cream cheese– 66 calories
1 tbsp shredded cheddar cheese – 55 calories
1 Tbsp parmesan grated Cheese – 50 calories
⅛ tsp Garlic salt – 0 calories
6 oz Chicken breast, boneless, skinless, raw – 190 calories

1 tbsp Buffalo sauce – 15 calories

 
DIRECTIONS
  1. Spray pan with an oil spray. Cube chicken.
  2. Cook for ~8 minutes on low-medium heat.
  3. Add in cauli rice for 7 minutes, stirring occasionally, until you see some browning.
  4. Add in the rest of the ingredients, stirring continuously until all mixed in.
