Buffalo Chicken Salad

330 calories

2 cups Leafy greens – 10 calories
1 Celery stalk, diced – 10 calories
1 small Cucumber sliced and quartered – 30 calories
6 oz Chicken breast, boneless, skinless, raw – 190 calories
2-5 Pickles, chip-cut – 0 calories
1 tbsp Buffalo sauce – 10 calories
2 Tbsp Tzatziki sauce (regular or Trader Joe’s vegan version) – 80 calories
 
Optional add-ons: Cherry tomatoes, red onion, crumbled blue cheese
 
DIRECTIONS
  1. Spray pan with an oil spray. Cut chicken into bite sized pieces.
  2. Cook for ~10 minutes on low-medium heat, or until cooked through.
  3. Once cooked, mix with buffalo sauce.
  4. Chop celery, cucumbers, and pickles into small pieces.
  5. Combine all ingredients and top with tzatziki.
