Salmon & Salad with Small Potatoes

  • 4 oz Salmon fillet – 200 calories
  • 4 cups Leafy greens, lettuce, raw – 20 calories
    • or 1 cup Asparagus Spears – 26 calories
  • 1 Tbsp Vinaigrette, regular (50 or more calories per 2 tbsp) – 50 calories
  • 2 Small golden potatoes – 180 calories
    • or 1/2 cup Rice (brown or white) – 109 calories
    • or 1 cup Sweet Potato (cubed) – 114 calories
  • ⅛ tsp Garlic salt – 0 calories
  • Lemon for the salmon 

DIRECTIONS

  1. Preheat oven to 425 degrees.
  2. Line baking sheet with parchment paper & spray with an oil spray.
  3. Bake salmon for 15-20 minutes or until flakes easily.
  4. While salmon is cooking, poke holes in potatoes and microwave for 5 minutes on both sides, until cooked.
  5. Mix lettuce and dressing.
  6. Season salmon with garlic salt.
