Shrimp & Zucchini Stir Fry with Peanut Sauce

  • 5 oz Shrimp, fresh or frozen – 140 calories
  • 2 Zucchini, medium – 66 calories
  • 2 Tbsp Peanut sauce – 80 calories
  • 1 tsp Salt – 0 calories
  • 1 tsp Pepper, ground – 0 calories
  • 1/4 tsp Garlic Powder – 0 calories

 

DIRECTIONS

  1. Spray a pan with an oil spray.
  2. Slice zucchini into coin shapes.
  3. Add in shrimp and zucchini into the pan.
  4. Cook for about 8-9 minutes on medium heat, stirring frequently, or until shrimp has cooked through.
  5. Drain away any excess liquid.
  6. Transfer to a bowl, season with salt, pepper & garlic powder. Top with peanut sauce.
