Pesto Chicken Salad

  • 6 oz Chicken breast, boneless, skinless, raw (could get grilled chicken strips to cube up from Trader Joe’s or Costco to make life easy!)- 190 calories
    2 cups Tomatoes, grape – 60 calories
    2 Tbsp Pesto (Tbsp) – 120 calories
    ¼ tsp Salt – 0 calories
    ¼ tsp Pepper, ground – 0 calories

DIRECTIONS

  1. Cut tomatoes into quarters
  2. Dice chicken
  3. Spray a pan with an oil spray
  4. Stir fry chicken and tomatoes until chicken has cooked through, ~8 minutes
  5. Add in pesto and seasonings at the end
