French Onion Chicken Skillet

1 small yellow Onion– 40 calories
6 oz Chicken breast, boneless, skinless, raw – 190 calories
⅓ cup shredded part skim mozzarella cheese – 110 calories
1 cup Cauliflower rice – 20 calories
¼ cup Broth (chicken, beef, veggie or bone) – 5 calories
1 Tbsp Butter – 100 calories
1/4 tsp Garlic salt – 0 calories
1/2 tsp Pepper – 0 calories
  1. Dice chicken and onion into bite sized pieces.
  2. Add butter to pan, melt.
  3. Cook chicken, onion, and cauli rice for ~10 minutes on medium-low heat, until chicken has cooked through and the onion is fragrant (you’ll know!).
  4. Add in broth and top with cheese and seasonings, simmer on low heat at least 5 minutes.
  5. Optional to broil at end
