Chicken Parm Cauliflower Gnocchi Skillet

1/2 package of Trader Joe’s Cauliflower Gnocchi – 170 calories
4 oz Ground chicken – 170 calories
1 cup canned diced tomatoes – 50 calories
⅓ cup shredded mozzarella – 110 calories
1 tbsp grated or shredded Parmesan cheese- 25 calories
¼ tsp Basil, dried – 0 calories
¼ tsp Oregano – 0 calories
¼ tsp Salt – 0 calories
¼ tsp Pepper – 0 calories
  1. Defrost the gnocchi: You can either let thaw out on the counter for an hour or you can microwave the gnocchi on a plate for 2-4 minutes. Once thawed you want to pat dry any condensation.
  2. In a large non-stick or well-seasoned cast iron skillet heat 2 tablespoon oil until it’s hot add the gnocchi in an even layer. Let the gnocchi sit undisturbed for 3 minutes. Flip the gnocchi and repeat until they are a light brown and crispy.
  3. Add in the ground chicken and cooked until no longer pink and gnocchi has browned.
  4. Add in tomatoes, let simmer for 5-6 minutes.
  5. Top with cheese and seasonings, heat for 5-6 minutes, until cheese has melted.
