Chicken Black Bean Chili

  • 2 cups Canned, diced tomatoes – 110 calories
  • 1 Carrots, whole, medium – 25 calories
  • 2 Celery stalks, chopped – 10 calories
  • ½ Onion, yellow, large – 30 calories
  • 6 oz Chicken breast or ground chicken – 190 calories
  • ½ cup canned black beans – 115 calories
  • ⅛ tsp Cumin – 0 calories
  • ⅛ tsp Chili seasoning – 0 calories
  • ¼ tsp Garlic powder – 0 calories
  • ¼ tsp Salt – 0 calories
  • ⅛ tsp Red pepper flakes – 0 calories
 

DIRECTIONS

  1. Dice chicken. Chop vegges into small pieces.
  2. Spray a pot with an oil spray. Add in veggies, chicken, and seasoning.
  3. Let heat through for ~12 minutes on low heat, stirring.
  4. Add in tomatoes and beans to the pot.
  5. Turn burner to low heat & let sit, covered, for a minimum of 10 minutes. Stir occasionally.
