Steak & Parmesan Salad

  • 3 cups Mixed greens, raw – 25 calories
  • 1/2 Cucumber, medium – 20 calories
  • 1/2 Bell pepper, yellow, medium – 20 calories
  • 1/2 cup grape tomatoes- 30 calories 
  • 1/4 cup Cheese, Parmesan, shaved (cups) – 80 calories
  • 6 oz Sirloin Steak – 200 calories
  • 1/2 Lemon, Whole – 10 calories
  • 2 Tbsp Balsamic vinegar – 30 calories
  • 1/4 tsp Salt – 0 calories

DIRECTIONS

  1. Slice steak, cherry tomatoes, cucumber, and pepper (keep veggies on a separate cutting board)
  2. Spray a pan with an oil spray and cook steak slices through, approx. 3 minutes on each side
  3. In a large bowl, add the veggies, steak, avocado, and parmesan
  4. Top with balsamic vinegar, squeezed lemon, and salt
