Greek Lentil Salad with Grilled Chicken

4 servings. 320 calories. 30g protein

  • 1 cup cooked lentils
  • 1 cup marinated jarred artichoke hearts 
  • 4 cups of lettuce
  • 1 cup olives (any kind)
  • 1 cup chopped cherry tomatoes 
  • 1 juiced lemon
  • 2 tbsp olive oil
  • 16 oz Grilled chicken

DIRECTIONS

  1. Cook lentils if needed according to package directions.
  2. Combine the
    lentils, artichoke hearts, olives, chopped cherry tomatoes, lemon juice, olive oil.
  3. When ready to eat, top 1/4  the above on some lettuce with 1/4 of the grilled chicken for one serving.
