- 1 cup cooked lentils
- 1 cup marinated jarred artichoke hearts
- 4 cups of lettuce
- 1 cup olives (any kind)
- 1 cup chopped cherry tomatoes
- 1 juiced lemon
- 2 tbsp olive oil
- 16 oz Grilled chicken
DIRECTIONS
- Cook lentils if needed according to package directions.
- Combine the
lentils, artichoke hearts, olives, chopped cherry tomatoes, lemon juice, olive oil. - When ready to eat, top 1/4 the above on some lettuce with 1/4 of the grilled chicken for one serving.
