Copycat Sweetgreen Harvest Bowl

600 calories

 
1 small sweet Potato – 100 calories
4 oz Chicken breast, boneless, skinless, raw – 110 calories
2 tbsp roasted and salted peptias- 125 calories 
1 cup Brussels sprouts – 55 calories
2 cups spinach or arugula or de-vined kale – 15 calories
¼ cup goat cheese – 100 calories
1/2 apple chopped– 50 calories 
2 Tbsp light balsamic vinaigrette  – 50 calories
 
DIRECTIONS
  1. Poke holes in top and bottom of potato with fork. Microwave for 5 minutes on top and bottom. Once cooked, cut into small pieces. OR first cut into small pieces and air fry for 20 min at 400 degrees.
  2. Slice chicken into strips, chop off hard ends of Brussels and slice in halves.
  3. Spray a pan with an oil spray. Cook chicken and Brussels for ~10 minutes on medium heat, until chicken has cooked through.
  4. Combine all ingredients.
