Chicken Parm Skillet With Hidden Veggie

4 oz ground chicken sausage, ground chicken or Rotisserie chicken – 200 calories
1 medium zucchini sliced into quaters – 35 calories
½ cup Pasta, penne, cooked (get lentil, chicken or quinoa pasta if you want more protein)- 100 calories
⅓ cup shredded Parmesan cheese– 110 calories
1 Tbsp grated Parmesan cheese – 25 calories
½ cup crushed canned tomatoes– 25 calories
1 tsp olive oil– 40 calories
¼ tsp Red pepper flakes (tsp) – 0 calories

½ tsp Garlic salt (tsp) – 0 calories

 
DIRECTIONS
  1. Note: this recipe works best when making 2+ servings at once. Double or triple the ingredients if you would like.
  2. Preheat oven to 400 degrees F
  3. Cook pasta as instructed on package
  4. Cook ground chicken if you need to or chop rotisserie chicken into small pieces 
  5. Dice zucchini into quater pieces
  6. Add oil to an oven-safe pan
  7. Stir fry chicken and zucchini for ~6 minutes, until zucchini has softened
  8. Mix in tomatoes, seasonings, and pasta
  9. Top with cheeses
  10. Optional: Bake for 8 minutes, then broil for 3
  11. Serve hot, or this dish also lasts for a 2-3 days in the fridge
