DIRECTIONS

  1. Poke holes in potato with fork on its top and bottom. Microwave for 4 minutes on its top and bottom.
  2. Dice apple and chop up sweet potato.
  3. Combine all ingredients in a large bowl.
  4. Top with red wine vinegar and seasonings.
