Pumpkin Protein Pancakes

Makes 2 servings

1 scoop vanilla protein powder – 60 calories
1/2 cup pumpkin purée –
21 calories
1/2 tsp ground cinnamon
1/2 tsp baking powder
2 large egg whites –
17 calories
1/2 cup old fashioned oats –
75 calories
1/2 cup unsweetened almond milk –
16 calories
1 Tbsp stevia

Top with 1 Tbsp Maple syrup (Tbsp) and 1/2 banana- 100 calories

DIRECTIONS

 

    1. Heat a nonstick griddle (or large nonstick skillet) coated with cooking spray over medium heat.

    1. Put all of the ingredients in a blender and blend until smooth.

    1. Scoop about 1/4 cup of batter per pancake onto hot griddle. Cook until tops are covered with bubbles and edges look firm and close to done; about 2-3 minutes. Flip and cook for additional 1-2 minutes or until pancakes are done.

    1. Serve warm immediately topped with 1 tbsp maple syrup and chopped banana.
