Mayo-Free Rotisserie Chicken Salad

  • 6 oz Rotisserie chicken – 300 calories
  • 2 oz 2% plain greek– 40 calories
  • 2 Celery stalks, chopped – 5 calories
  • 1/2 medium Cucumber – 30 calories
  • 1 tsp Dijon mustard – 5 calories
  • ½ cup red Grapes – 50 calories
  • ⅛ tsp Salt – 0 calories
  • ⅛ tsp Pepper, ground – 0 calories
  • 1/2 Lemon, Whole – 5 calories
  • 1 Tbsp Parsley, fresh – 0 calories
 

DIRECTIONS

  1. Dice celery and cucumbers.
  2. Slice grapes into quarters, chicken into small pieces, and slice up parsley.
  3. Combine all ingredients, top with lemon juice, salt, and pepper.
  4. Mix well.
