Lighted Up Chicken Tikka Masala

  • 6 oz Chicken breast, boneless, skinless, raw – 190 calories
  • 1 Bell pepper, red – 40 calories
  • 1 cup Cauliflower rice, raw (already riced) – 20 calories
  • 1 small white onion – 50 calories
  • ½ cup Tikka Masala sauce – 120 calories
  • Optional: slice of mini Stonefire naan on the side- 150 calories
     
DIRECTIONS
  1. Cut chicken into bite sized pieces, slice peppers and onions.
  2. Spray pan with an oil spray. Cook chicken and veggies for about 12 minutes on medium heat, until all have cooked through.
  3. Add in cauliflower rice for about 5 minutes, and until it begins to brown.
  4. Top with Tikka Masala sauce, let simmer on low heat  for about 3 minutes.
