Ground Beef Veggie Rice Skillet

500 calories 

1 cups Cauliflower rice, raw (already riced) – 20 calories 

1/2 cup cooked white or brown rice- 110 calories 

1 Celery stalks, chopped diced – 10 calories

1 Bell pepper, diced – 43 calories

¼ Onion, yellow – 13.75 calories

4 oz Ground beef, 90% lean, raw – 185 calories

1 Tbsp Olive oil (Tbsp) – 119 calories

⅛ tsp Garlic salt – 0 calories

¼ tsp Paprika – 0 calories

⅛ tsp Cumin – 0 calories

¼ tsp Pepper – 0 calories

 
DIRECTIONS
  1. Dice celery, peppers, and onion.
  2. Add oil to pan.
  3. Stir fry veggies on medium heat, ~4 minutes.
  4. Add in beef for another 4-5 minutes, stirring until no longer pink.
  5. Add cauli rice for another 5 minutes, sritting, until you see some browning.
  6. Top with seasonings.
  7. No beef? Use ground turkey, tofu, or beans.
