Chicken Fajitas

  • 6 oz Chicken breast, boneless, skinless, raw – 190 calories
  • 1 Bell pepper, red – 30 calories
  • 2 cups spinach – 14 calories
  • ¼ Avocado – 50 calories
  • 2 Carb-savvy or corn tortillas, (Mission brand or Trader Joe’s brand are good options)– 100 calories
  • ¼ tsp Salt – 0 calories
  • ¼ tsp Pepper – 0 calories
  • 2 tbsp taco or fajitas sauce– 40 calories

DIRECTIONS
  1. Slice bell peppers and chicken into thin strips.
  2. Spray a pan with an oil spray.
  3. Stir fry chicken and peppers ~8 minutes, until cooked through. Add in spinach and fajita or taco sauce for another 1-2 minutes.
  4. Add in salt, pepper, and cubed avocado.
  5. Add to tortillas.
  6. No chicken? Use tuna, tofu. Gluten-free? Use gluten free tortilla, e.g. corn.
