High Volume and Protein Chia Oat Pudding

1 serving. 315 calories. 30g protein

  • 2/3 cup Riced cauliflower, steamed
  • 1/3 cup Oats 
  • 2 tsp Chia seeds
  • 2/3 scoop Vanilla protein powder (I use Ascent Whey Vanilla Bean)
  • 1/2 cup milk of choice
  • 1/4 c vanilla greek yogurt (I love Oikos Triple Zero. Your you could use Kite Hill Dairy Free Greek Yogurt if you need dairy free)
  • 1 tsp Vanilla extract 
  • 1 tsp Cinnamon
  • Pinch of salt

DIRECTIONS

  • Get a steamable, frozen bag of cauliflower rice. Steam in the bag for the full four minutes so it’s nice and soft. Let most of the water drain out.

  • In your jar, mug or small bowl, combine oats, chia seeds, protein powder, yogurt, milk, vanilla extract, cinnamon, and a pinch of salt. Stir well, then add your steamed cauliflower rice and stir again. Cover and refrigerate for a few hours or overnight.

  • When you’re ready to enjoy, add your favorite toppings!
