Bison Burgers with Caramelized Onion and Mushroom

2 serving. 500 calories. 30g protein

  • 1/2 lb ground bison or duck breast
  • 1 tbsp maple syrup
  • 1 tbsp soy sauce (sub with coconut aminos for gluten free/ paleo)
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon ground black pepper
  • 2 tablespoon olive oil
  • 1 package shitake mushrooms, sliced 
  • 1 small yellow onion, sliced thin
  • 1 avocado
  • Daves Killer or any whole grain burger bun

DIRECTIONS

  • Place all the ingredients, except the oil, in a bowl and stir them together to combine.
  • Form the ground meat mixture into 2 even sized patties, making a thumb print in the middle of each patty.
  • Place a frying pan on the stove on medium-high heat and add 1 tbsp oil, cook the burgers for 3-5 minutes per side, until cooked through.
  • Remove patties. Add the other tbsp oil to the pan. Sauté the chopped onions for 2 minutes, then add the mushrooms and sauté for another 3 to 5 minutes. 
  • Top burger patty and sautéed mushrooms and onion on a burger bun and enjoy
