Steak Arugula Parmesan Salad

500 calories

4 cups arugula – 20 calories
1 small Cucumber – 20 calories
1 small red bell pepper (or apple or pear)– 35 calories
1/4 Avocado – 60 calories
¼ cup Parmesan cheese, shaved  – 85 calories
6 oz Sirloin Steak – 190 calories
½ Lemon, Whole – 11 calories
1/2 tbsp extra virgin olive oil- 50 calories
2 Tbsp Balsamic vinegar – 28 calories

¼ tsp Salt – 0 calories

 
DIRECTIONS
  1. Slice steak, avocado, cucumber, and pepper (keep veggies on a separate cutting board)
  2. Spray a pan with an oil spray and cook steak slices through, ~3 minutes on each side
  3. In a large bowl, add the veggies, steak, avocado, and parmesan
  4. Top with balsamic vinegar, olive oil, squeezed lemon, and salt
  5. No steak? Use tofu, chicken, beans, or more parmesan. No dairy? skip cheese.
