Chicken Alfredo Pasta

1 chicken Sausage – 140 calories
1 Zucchini, medium – 49.5 calories
½ cup Pasta, penne, whole wheat or chickpea or lentil, cooked – 100 calories
2 cups spinach – 14 calories
¼ cup Alfredo sauce – 100 calories
1 cup cherry tomatoes – 75 calories
⅛ tsp Garlic salt – 0 calories
⅛ tsp Red pepper flakes – 0 calories
 
DIRECTIONS
  1. Cook pasta as instructed on its package on stovetop.
  2. Slice sausage into coin shapes and slice zucchini into small pieces.
  3. Spray a pan with a cooking spray.
  4. Stir fry sausage for ~10 minutes on low-medium heat, until cooked through. Add in zucchini and stir fry another ~3-5 minutes.
  5. Add in cooked pasta, spinach, tomatoes, Alfredo sauce, and seasonings and mix together. Let simmer, stirring occasionally.
  6. Serve and enjoy!
  7. No dairy? Use dairy-free pesto sauce, available at most stores. No meat? Use beans or tofu.
