Ingredients:
Salad fixings:
- 1 lb 90% lean ground beef
- 1/2 yellow onion
- 12 baby Yukon potatoes
- 1 cup Parmesan cheese
- 4 cups butter lettuce
- 1 cup chopped cherry tomatoes
- 15 pickle chips
- 1 tsp paprika
- 1 tsp garlic powder
- salt and pepper to taste
Special sauce ingredients: - 2 tablespoons dijon mustard
- 2 tablespoons olive oil
- 1 tablespoons mayo
- 1 tablespoon pickle juice
- paprika, salt, pepper to taste
Instructions:
1. Cook 1lb lean ground beef in olive or avocado oil with 1/2 a diced yellow onion, paprika, garlic powder, onion powder, salt, pepper over medium heat
2. Fold in about 10-12 air fried (or baked) chopped up baby potatoes – I air fried mine at 375 for 15 min
3. Top with 1 cup shredded Parmesan or cheddar cheese
4. Assemble mixed greens, chopped cherry tomatoes, pickle chips (I did bread and butter), top with ground beef skillet and special sauce
