
Made with wholesome ingredients like raw cashews, oat flour, and coconut, these bites are not only delicious, but also good for you. Best of all, they’re easy to make and a hit with kids! Soak your cashews, blend all the ingredients, roll into balls and chill. In no time, you’ll have a healthy snack that’s perfect for on-the-go!
Ingredients:
1 cup raw unsalted cashews (soak in water for 1 hour before)
1/2 cup oat flour
1/4 cup coconut flour
3 tbsp unsweetened shredded coconut
1 tbsp pure maple syrup or honey
1 tsp pure vanilla extract
1 tsp sea salt
2 tbsp warm water (may need more or less depending on blender / food processor and desired consistency)
Instructions:
1. Strain cashews from water they soaked in
2. Add them to high speed blended or food processor along with the rest of ingredients and start with 1 tbsp of warm water to start with
3. Blend and add more warm water until mixture is at desired consistency before rolling into balls. (Should be a raw cookie dough consistency– not wet but not dry)
4. Refrigerate for at least 3 hours before enjoying. Can store in sealed container in fridge for about 1 month.
Having 1-2 as a snack will be a good sources of healthy fats and fiber!
